BBQ Tofu 'Sausage' Roll

Method

  1. Preheat oven the 180 degrees Celsius. Line a baking tray with parchment paper. 
  2. Heat a large frying pan with the olive oil to medium-high heat. Add the diced onion and garlic, cook for 1-2 minutes. Add the cumin, parsley, paprika, salt and pepper. Cook for another 1 minute. Add the tomato paste, tamari.
  3. Add in the crumbled tofu, bbq sauce and hot water. Cook until the tofu is completely coated and warmed through.
  4. Brush the wrap with some of the beaten egg. Add about 3 tbsp filling into the wrap and roll up (make sure you brush the end of the wrap well with the egg mixture to ensure it sticks). Place it on the baking tray and brush the top with egg. Repeat with remaining wraps and tofu mixture.
  5. Bake for 25 minutes, until golden on top and crispy.
