Chicken Pad Thai

Method


  1. Cook the rice noodles according to the packet instructions, set them aside. Combine the peanut butter, soy sauce, curry paste, sesame oil, stevia and light sweet chilli sauce in a bowl, set aside.
  2. Heat a frying pan to medium-high heat. Cook the chicken in batches until it is golden on the outside and cooked through the middle. Set aside. In the same frying pan stir-fry, the veggies until cooked.
  3. Once the veggies are cooked add the cooked chicken, rice noodles and sauce. Stir until everything is well combined.
  4. Portion out into 4 servings. Enjoy!
