
Chicken Pad Thai
Makes 4 servings
Ingredients
- 500g Chicken Breast, cut into strips
- 250g Pad Thai Rice Noodles
- 1 Onion, sliced
- 1 Carrot, chopped
- Handful Green Beans, chopped
- Broccolini, chopped
- 2 Tbsp Maybers Smooth Peanut Butter
- 3 Tbsp Soy Sauce
- 1 Tbsp Red Curry Paste
- 1 Tsp Sesame Seed Oil
- 1 Tsp Stevia
- 1-2 Tbsp Light Sweet Chilli Sauce
Method
- Cook the rice noodles according to the packet instructions, set them aside. Combine the peanut butter, soy sauce, curry paste, sesame oil, stevia and light sweet chilli sauce in a bowl, set aside.
- Heat a frying pan to medium-high heat. Cook the chicken in batches until it is golden on the outside and cooked through the middle. Set aside. In the same frying pan stir-fry, the veggies until cooked.
- Once the veggies are cooked add the cooked chicken, rice noodles and sauce. Stir until everything is well combined.
- Portion out into 4 servings. Enjoy!
