
Choc Berry Banana Muffin
Ingredients
- 3 very ripe bananas
- 2 eggs
- 2 tbsp nuttalex
- ¼ cup rice malt syrup
- 1 tsp vanilla
- 2 cups plain flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 cup frozen raspberry
- 100g dark chocolate
Method
- Preheat the oven to 170 Degrees Celsius. Line 8 muffin tin holes with patty cases and set them aside.
- In a large mixing bowl mash the bananas. Mix in the eggs, melted nuttalex, rice malt syrup and vanilla. Whisk to combine.
- Sift in plain flour, baking powder and cinnamon. Fold in Frozen raspberries and dark chocolate.
- Spoon evenly into patty cases. Bake for 25 minutes or until a skewer once inserted comes out clean.
