This cookie is great to share when in a group environment. It is crispy on the outside but soft and fluffy on the inside.




Choc Raspberry Skillet Cookie

Method


  1. Preheat the oven to 165 Degrees C. Grease a small frying pan or ovenproof dish.
  2. In a bowl combine the nuttalex and stevia. Mix until combined. Add the egg and vanilla and mix again.
  3. Add the flour, baking powder and a pinch of salt. Mix until combined.
  4. Stir through the chocolate chips and raspberries.
  5. Bake for 25-30minutes. It should be golden and crispy on top + light and fluffy on the inside.
  6. Serve with yoghurt or ice cream.
