This cookie is great to share when in a group environment. It is crispy on the outside but soft and fluffy on the inside.
Choc Raspberry Skillet Cookie
Ingredients
- 60g Nuttelex, melted
- 1/3 Cup Stevia
- 1 Egg
- 1 Tsp Vanilla Essence
- 1 Cup @vettapasta Plain Protein Flour
- 1 Tsp Baking Powder
- 1/2 Cup Chocolate Chips
- 1/3 Cup Frozen Raspberries
Method
- Preheat the oven to 165 Degrees C. Grease a small frying pan or ovenproof dish.
- In a bowl combine the nuttalex and stevia. Mix until combined. Add the egg and vanilla and mix again.
- Add the flour, baking powder and a pinch of salt. Mix until combined.
- Stir through the chocolate chips and raspberries.
- Bake for 25-30minutes. It should be golden and crispy on top + light and fluffy on the inside.
- Serve with yoghurt or ice cream.
