You would never know that there is a vegetable hidden in these brownies. You just can't go wrong with these chocolate brownies, they are soft and moist with a crispy outer layer. They are sweet and perfect served warm with ice cream.
Chocolate Protein Brownies
Ingredients
- 3/4 Cup Plain Flour
- 1/4 Cup Chocolate Protein Powder
- 1 Tsp Baking Powder
- Pinch of Salt
- 110g Butternut Pumpkin, boiled and mashed
- 1/3 Cup Maple Syrup or Rice Malt Syrup
- 1/4 Cup Nuttalex, melted
- 1 Egg, lightly beaten
- 1 Tsp Vanilla Essence
- 120g Lindt 70% dark chocolate, melted
Method
- Preheat the oven to 180 degrees C. Line a baking tin with parchment paper.
- Add the dry ingredients to a bowl (flour, protein powder, baking powder and salt). Stir to combine.
- To a separate bowl mix the pumpkin, maple syrup, nuttalex, egg and vanilla essence.
- Add the wet ingredients to the dry and mix. Add the melted chocolate and gently mix.
- Transfer mixture to the prepared baking tin and bake for 10-20 minutes. A skewer should come out clean when inserted. Allow to cool before cutting.
