Crispy Tofu Salad
Ingredients
- 400g Firm Tofu, pressed dry and cubed
- 1/3 Cup Soy Sauce
- 2 Tbsp Honey
- 1 Tsp Crushed Garlic
- 1 Tsp Crushed Ginger
- Pinch Chilli Flakes
- 4 Cups Shredded Lettuce,
- 2 Cups Shredded Spinach
- 2 Spring Onions
- 2 Tbsp Parsley
- Handful Snow Peas, Sliced
- 1 Punnet Cherry Tomatoes, quartered
- 1/2 Cucumber, sliced
- 1 Carrot Grated.
- 2 Tbsp Fried Shallots
Method
- Preheat the oven to 190 degrees C. Line a baking tray with parchment paper.
- Mix the soy sauce, honey, garlic, ginger and chilli in a bowl. Add the tofu to the bowl, leave to marinate for 5 minutes. Add the tofu to the baking tray (reserve the sauce to use as the salad dressing). Bake for 20-35 minutes. Until crispy.
- Add all the salad ingredients to a bowl. Toss to combine. Divide into portions and top with cooked tofu, a drizzle of the remaining dressing and fried shallots.
