Falafel Salad With Garlic Flatbread
Ingredients
- 1 Cup Self Rasing Flour
- 2 Garlic Cloves, crushed
- 1/2 Cup Greek Yoghurt
- 16 Falafels
- Garden Salad Mix
- Caramelised Onion Hummus
- 80g Feta
Method
- Preheat the oven to 180 degrees C. Line a baking tray with baking paper. Spread the falafels out and bake for 10-15 minutes or until crispy on the outside and warm in the middle.
- Meanwhile, add the flour, garlic cloves, greek yoghurt, salt and pepper to a bowl. Mix until combined. You may have to use your hands to really combine the mixture to create a dough.
- Lightly flour a surface and tip the dough out on to it. Knead until smooth.
- Cut the dough in 4 portions and roll each out out with a rolling pin.
- Heat a frying pan to medium-high heat. Add one flatbread at a time to the pan. Cook until golden on each side and slightly puffed up.
- In 4 bowls evenly divide the garden salad, cooked falafels, cooked flatbread, hummus and feta.
