Falafel Salad With Garlic Flatbread

Method


  1. Preheat the oven to 180 degrees C. Line a baking tray with baking paper. Spread the falafels out and bake for 10-15 minutes or until crispy on the outside and warm in the middle.
  2. Meanwhile, add the flour, garlic cloves, greek yoghurt, salt and pepper to a bowl. Mix until combined. You may have to use your hands to really combine the mixture to create a dough.
  3. Lightly flour a surface and tip the dough out on to it. Knead until smooth.
  4. Cut the dough in 4 portions and roll each out out with a rolling pin.
  5. Heat a frying pan to medium-high heat. Add one flatbread at a time to the pan. Cook until golden on each side and slightly puffed up.
  6. In 4 bowls evenly divide the garden salad, cooked falafels, cooked flatbread, hummus and feta.
  7. Enjoy!
