This loaf is so moist and sweet that you would have NO IDEA that there is a vegetable in it.
Gluten-Free Zucchini Loaf
Ingredients
- 1 Medium Zucchini
- 3 Medium Eggs
- 113g Nuttalex, melted
- 1/2 Cup Stevia
- 1/2 Cup Cocoa Powder
- 1 Tsp Vanilla Essence
- 1 Cup Gluten Free Flour
- 1 Tsp Baking Powder
- 80g Chocolate Chips
Method
- Preheat the oven to 175 degrees C. Line a baking loaf tin with parchment paper.
- Grate the zucchini, squeeze all the liquid out and set aside.
- To a bowl add the eggs, nuttalex, stevia, cocoa powder and vanilla essence. Whisk until well combined.
- With a spatula fold through the zucchini.
- Add the flour, baking powder, pinch of salt and chocolate chips. Stir until combined.
- Transfer to the prepared baking tin. Bake for 40-50minutes or until when a skewer is inserted it comes out clean. Allow to cool before slicing.
