Gluten-Free Zucchini Loaf


Ingredients



Method


  1.  Preheat the oven to 175 degrees C. Line a baking loaf tin with parchment paper.
  2. Grate the zucchini, squeeze all the liquid out and set aside.
  3. To a bowl add the eggs, nuttalex, stevia, cocoa powder and vanilla essence. Whisk until well combined.
  4. With a spatula fold through the zucchini.
  5. Add the flour, baking powder, pinch of salt and chocolate chips. Stir until combined.
  6. Transfer to the prepared baking tin. Bake for 40-50minutes or until when a skewer is inserted it comes out clean. Allow to cool before slicing.
