
1. Crush garlic and add to a small dish with 1 ½ tbsp olive oil and season with salt and pepper, set aside
2. Add the diced tomatoes to a small bowl and mix through the balsamic vinegar. Set aside
3. Heat a fry pan to medium-high heat. Once hot add the halloumi and cook on each side until golden.
4. While the halloumi is cooking place the sourdough into a toaster and toast until the desired crunch.
5. Brush the toasted sourdough with the garlic olive oil, place the tomato on top of the bread and evenly place the halloumi on top of the tomato. Sprinkle the basil leaves on top.
6. Enjoy
