
Healthier Chicken Schnitzel
Serves 4
Ingredients
- 300g Chicken Breast
- 1 Egg
- ¼ Cup Almond Milk (or milk of choice)
- ½ Cup Plain Flour
- 2 Cups Bread Crumbs
- 1 Garlic Clove, crushed
- 3 Tbs Mixed Herbs
- 1 Tbsp Lemon Rind
- 1 Tbsp Parmesan cheese (Can substitute for nutritional yeast if dairy-free)
Method
- Slice the Chicken breast in half long ways to make them thin. (If they are still too thick wrap them individually in glad wrap and bang them with a rolling pin to flatten them out). Set the chicken aside.
- Get 3 different bowls. In the first bowl add the flour. In the second bowl whisk together the egg and milk. In the third bowl add the Bread crumbs, garlic clove, mixed herbs, lemon rind and parmesan cheese.
- Place the chicken breast in bowl 1 (flour) then dip in bowl 2 (egg and milk mixture) and then dip in bowl 3 (bread crumb mixture) make sure the chicken is completely coated with bread crumbs. Repeat with all chicken breasts.
- Heat a Frying pan to medium-high heat. Add a splash of olive oil. Once the frying pan is hot add the chicken breast. Cook for around 4-6 minutes on each side until golden on the outside and cooked through on the inside.
- Plate up with roasted sweet potato and a side garden salad.
