These muffins are high in protein and are perfect to get you through the afternoon slumps.
Healthy Banana Choc Chip Muffin
Ingredients
- 1 Medium Banana
- 1 Medium Egg
- 1 Tsp Vanilla Essence
- 125ml Almond Milk
- ¼ Cup Stevia
- 1 Cup Flour
- 1 Tsp Baking Powder
- 1 Tsp Cinnamon
- Pinch Salt
- 70g Choc Chips
Method
- Preheat oven to 180 degrees C.
- In a bowl mash the banana. Add the egg, vanilla and almond milk. Whisk until well combined. Stir through the stevia.
- Sift the flour, baking powder and cinnamon. Add to the wet ingredients along with the salt and stir until combined.
- Fold through the chocolate chips.
- Spoon into 6 muffin holes.
