
High Protein Lemon Pancakes
Ingredients
- 160g Yo-Pro Yoghurt Vanilla
- 65g Self-Raising Flour
- 1 Egg, lightly beaten
- 1/2-1 Tbsp Stevia
- 1 Tbsp Almond Milk
- 1 Tbsp Lemon Rind
- Squeeze Lemon Juice
Method
- Add all ingredients to a bowl, mix until well combined.
- Heat a frying pan to medium-high heat. Add a few tablespoons of mixture to the pan at a time. Cook until both sides of the pancakes are golden and they are cooked through the middle.
- Top pancakes with sugar free syrup and berries.
- Enjoy!
