Serves 5-6
This fried rice recipe is perfect to batch cook for a busy week ahead. It is packed full of protein and veggies, leaving you feeling full and satisfied.
1. Heat a large fry pan to medium-high heat. Add the eggs and scramble. Set aside. Add a dash of olive oil to the pan and add the onion and garlic, cook for 1-2 minutes. Add the remaining veggies (except the peas) and stir-fry until cooked.
2. Once the veggies are cooked add the cooked rice, frozen peas, cooked egg and sauce. Mix well until combined. Divide evenly into 5-6 containers.
