
Overview
This salad is light and fresh. It goes well with grilled chicken or sausage rolls.
Pear and Walnut Salad
Ingredients
- 1 Large Pear, sliced
- 50g Walnuts, Chopped
- 60g Rocket
- 50g Feta
- Balsamic Vinegar
Method
- Head a large fry pan or grill up. Once hot, add the sliced pear and grill each side until the pear has slightly softened and is warm. Remove from the pan and set aside.
- In the same pan or grill add the walnuts and toast. They burn easily so keep an eye on them and keep tossing the fry pan.
- Add to a salad bowl the Rocket, pear, walnuts and toss. Crumble the feta over the top and drizzle with balsamic vinegar.
- Serve
