Method


  1. Preheat the oven to 200 degrees C.
  2. Heat a saucepan to medium heat. Add the olive oil, onion and garlic, cook, until the onion starts to soften.
  3. In a small jug add the soy milk and cornflour, whisk together.
  4. Once the onion is soft add the soy milk mixture, nutritional yeast, vinegar, nutmeg, 1 tsp rosemary, salt and pepper. Stir on low-medium heat until the sauce starts to thicken, about 10-15 minutes.
  5. Once the sauce has slightly thickened add the thinly sliced potato.
  6. Transfer the mixture into an ovenproof dish. Push the potato slices down to ensure they are completely coated by the mixture. Sprinkle over additional rosemary.
  7. Bake for 40 minutes. Allow to cool slightly before serving.
