Vegan Potato Bake
Ingredients
- 1kg Potato, thinly sliced
- 1 Tbsp Olive Oil
- 1 Red Onion, sliced
- 4 Garlic Cloves, crushed
- 2 1/2 Cups Protein Plus Soy Milk
- 1 Tbsp Corn Flour
- 4 Tbsp Nutritional Yeast
- 1 Tsp Apple Cider Vinegar
- 1/4 Tsp Nutmeg
- 1 Tsp Rosemary + extra
Method
- Preheat the oven to 200 degrees C.
- Heat a saucepan to medium heat. Add the olive oil, onion and garlic, cook, until the onion starts to soften.
- In a small jug add the soy milk and cornflour, whisk together.
- Once the onion is soft add the soy milk mixture, nutritional yeast, vinegar, nutmeg, 1 tsp rosemary, salt and pepper. Stir on low-medium heat until the sauce starts to thicken, about 10-15 minutes.
- Once the sauce has slightly thickened add the thinly sliced potato.
- Transfer the mixture into an ovenproof dish. Push the potato slices down to ensure they are completely coated by the mixture. Sprinkle over additional rosemary.
- Bake for 40 minutes. Allow to cool slightly before serving.
