Gluten and Dairy Free Banana Bread
Ingredients
- 2 Very Ripe Medium Bananas OR 3 Small Bananas
- 2 Eggs
- 1/2 Cup Coconut Yoghurt
- 1/3 Cup Stevia
- 1 1/2 Cup Gluten Free Flour
- 1 Tsp Baking Powder
- Pinch Salt
- 1/4 Cup Coconut Flakes
Method
- Preheat the oven to 170 Degrees C. Line a loaf tin with baking paper.
- In a large bowl mash the bananas. Add the eggs and yoghurt, mix until well combined. Add the stevia and mix again.
- Add the flour, baking powder and salt to the wet ingredients. Mix until well combined.
- Transfer the mixture to the prepared baking loaf tin. Add coconut flakes on top.
- Bake for 40-45 minutes or until when a skewer is inserted it comes out clean.
