Salted Caramel Cookies

Method


  1. Preheat the oven to 180 degrees C. Place the dates in a bowl and cover with boiling water. Once the dates are soft, mash with a fork. Add the almond butter, rice malt syrup, egg and vanilla essence, whisk until it is well combined.
  2. In a separate bowl add the oat flour, self-raising flour and sweetener. Pour the date mixture over the flour mixture and mix until a dough is formed. Stir through chocolate chips.
  3. Portion the cookie dough into 10. Roll each portion into a ball and press flat on a baking tray that has been lined with baking paper.
  4. Bake the cookies for 10-12 minutes or until golden on top.
  5. Enjoy!
