
Salted Caramel Cookies
Ingredients
- 5 Medjool Dates, remove the pip
- 2 Tbsp Almond Butter
- 2.5 Tbsp Rice Malt Syrup
- 1 Egg
- 1 Tsp Vanilla Essence
- 1/2 Cup Oat Flour
- 1/2 Cup + 2 Tbsp Self-Raising Flour
- 1-2 Tbsp Monk Fruit Sweetener
- Optional to add chocolate chips
Method
- Preheat the oven to 180 degrees C. Place the dates in a bowl and cover with boiling water. Once the dates are soft, mash with a fork. Add the almond butter, rice malt syrup, egg and vanilla essence, whisk until it is well combined.
- In a separate bowl add the oat flour, self-raising flour and sweetener. Pour the date mixture over the flour mixture and mix until a dough is formed. Stir through chocolate chips.
- Portion the cookie dough into 10. Roll each portion into a ball and press flat on a baking tray that has been lined with baking paper.
- Bake the cookies for 10-12 minutes or until golden on top.
