
Overview
This meal is packed full of flavour. It has a creamy satay sauce and a mix of different veggies. This meal is great to batch cook for meal prep.
Satay Noodles
Ingredients
- 200g Slendier Soy Bean Fettuccine
- 1 Medium Carrot, cut into match sticks
- 1 Bunch Broccolini, Chopped
- 150g Sugar Snap Peas
- Half Wombok Cabbage, shredded
- 500g Chicken mince, cooked
Peanut sauce
- 2 Tbsp Peanut Butter
- 4 Tbsp Soy Sauce
- 2 Tsp Rice Wine Vinegar
- 1 Tsp Crushed Ginger
- 2 Garlic Clove, Crushed
- 2 Tbsp Warm Water
Method
- Cooked the noodles according to the packet instructions, set aside. Cook the chicken mince until it is no longer pink, set aisde.
- Heat a frying pan to medium-high heat. Add the chopped veggies and cook until soft.
- Meanwhile, combine all the sauce ingredients in a bowl and stir to combine.
- When the veggies are cooked add the protein, noodles and sauce. Stir until the dish is fully coated. Portion out into 4 servings.
