Thai Red Curry Ramen

Method


  1. Cook soba noodles according to the packet.
  2. In a deep fry pan or large saucepan. Heat sesame oil, once hot add ginger, onion and garlic. Pan fry until the onion is soft. Add curry paste and pan fry until fragrant.
  3. Add Veggie stock, tamari and almond butter and stir until combined. Add coconut milk, broccolini and capsicum.
  4. Simmer for 5 minutes, add mushrooms and tofu and simmer for another 5 minutes.
  5. Add soba noodles to a bowl and top with ramen mixture.
  6. Enjoy
