This dish is perfect for a cold winter night. It is packed full of flavour and will leave you feeling satisfied.
Thai Red Curry Ramen
Ingredients
- 270g Soba Noodles
- 3 Garlic cloves, crushed
- 1 thumb-size knob of ginger, grated
- 1 small brown onion, finely chopped
- 1 capsicum
- 1 Bunch Baby Broccolini
- 150g Cup Mushrooms
- 1 tsp Sesame oil
- 2.5 cups Veggie stock
- 2 tbsp tamari
- 1 tsp almond butter (optional)
- ¼ cup red curry paste
- 2 x 270g lite coconut milk
- 400g firm tofu
Method
- Cook soba noodles according to the packet.
- In a deep fry pan or large saucepan. Heat sesame oil, once hot add ginger, onion and garlic. Pan fry until the onion is soft. Add curry paste and pan fry until fragrant.
- Add Veggie stock, tamari and almond butter and stir until combined. Add coconut milk, broccolini and capsicum.
- Simmer for 5 minutes, add mushrooms and tofu and simmer for another 5 minutes.
- Add soba noodles to a bowl and top with ramen mixture.
