
Vegan Bounty Bar
Ingredients
- 1 1/2 cup desiccated coconut
- 2 tbsp cornflour
- 1/2 cup dairy-free coconut condensed milk (you can get this in the supermarket or make your own)
- 1 tsp vanilla essence
- 100g Dark chocolate, melted to coat
Method
- Add all ingredients to a blender (except chocolate). Blend until combined and mixture sticks together.
- Line a baking tray with parchment paper and press the coconut mixture into the tray (*tip. Wet hands before pressing the mixture down. This prevents the mixture from sticking to your hands.)
- Spread half the melted chocolate over the top. Place in the freezer for 10 minutes. Peel the slice off the baking paper, flip over, coat the other side and place back in the freezer to set for an hour.
- Cut into slices and store in an airtight container in the fridge.
