Overview
The gnocchi is light and fluffy. The sauce is packed full of flavour. This meal is delicious and it is guaranteed that it will leave you feeling incredibly satisfied.
Vegetarian Gnocchi
Ingredients
- 750g Spud Lite, boiled
- 1 ¼ Cup Vetta Protein Plain Flour
- 1 Onion, diced.
- 2 Garlic Cloves, crushed
- 1-2 Tbsp Olive Oil
- 1 Tbsp Italian Herbs
- 1 Tsp Chilli Flakes
- 1 Lemon Zest + 1 Tbsp Lemon Juice
- 300g White Cup Mushrooms, Sliced
- 3 Cups Spinach
*Optional to add extra protein e.g. chickpeas or tofu
Method
- Add the boiled potatoes to a large bowl. Mash until smooth. Season with salt. Add the flour to the potatoes and mix.
- Turn the potato mixture out onto a floured surface and start to knead. Once smooth roll into a long skinny log and cut into gnocchi pieces.
- Bring a pot of salted water to a boil. Cook the gnocchi, making sure to not overcrowd the pot. When gnocchi is cooked it will float to the top. *NOTE: save ¼ cup pasta water.
- Meanwhile, heat a frying pan to medium-high heat. Add the garlic and onion and pan-fry for 1-2 minutes. Add the mushrooms and Italian herbs. Cook until the mushrooms are soft.
- Once the mushrooms are cooked add the cooked gnocchi, olive oil, pasta water, chili flakes, lemon, spinach, salt, and pepper. Toss to combine.
- Portion out into 4 servings.
