
Vegetarian Pesto Pasta
Makes 3 Servings.
Ingredients
- 180g Protein Pasta
- 1 Jar Leggos Pesto
- 1 Onion, diced
- 2 Garlic Cloves, crushed
- 250g Mushrooms, sliced
- 1/2 Head Broccoli, cut into smaller florets
- 2 Large Handful Spinach
- 1/2 Punnet Cherry Tomatoes, cut into quarters
Method
- Cook the pasta according to the packet instructions. **Reserve 1/4 cup pasta water.
- Heat a frying pan to medium-high heat. Add the onion, garlic and broccoli and saute until the broccoli starts to soften. Add mushrooms and cook until soft.
- Add the cooked pasta to the veggie pan. Add the pesto and pasta water, toss to combine. Stir through spinach and tomatoes.
- Serve and Enjoy!
