Vegetarian Pesto Pasta

Method


  1. Cook the pasta according to the packet instructions. **Reserve 1/4 cup pasta water.
  2. Heat a frying pan to medium-high heat. Add the onion, garlic and broccoli and saute until the broccoli starts to soften. Add mushrooms and cook until soft.
  3. Add the cooked pasta to the veggie pan. Add the pesto and pasta water, toss to combine. Stir through spinach and tomatoes.
  4. Serve and Enjoy!
