
Mini Choc Chip Banana Loaves
Ingredients
- 2 Medium Ripe Bananas
- 2 Eggs
- 1/4 Cup Vanilla Yopro Yoghurt
- 1 Tsp Vanilla Essence
- 1/3 Cup Stevia
- 1 1/2 Cup Wholemeal Self-Raising Flour
- Pinch Salt
- Choc Chips
Method
- Preheat the oven to 175 degrees C.
- To a bowl add the bananas and mash, add the eggs, yoghurt and vanilla essence, whisk together until well combined.
- Add the stevia, flour and salt to the wet ingredients. Mix until combined. Stir through the chocolate chips.
- Portion the mixture out into 8 mini loaf moulds.
- Cook for 20-25 minutes or until a skewer is inserted it comes out clean.
